Coconut Curry Shrimp with Cauliflower Rice

I’ve been thinking about trying cauliflower rice for a while and was sort of stumped on what to serve it with. The coconut curry shrimp looks amazing. My boyfriend is a huge shrimp fan and I’ve been wanting to try my hand at more thai food. Thanks for sharing this delicious paring.
