Paleo Coleslaw

We’ve been trying to eat cleaner food at our house lately. I’m going to say it’s paleo-ish. What that really means is that my husband cooks wonderful paleo breakfasts for those of us who eat at home in the morning {think lots of eggs and veggies} and I prepare paleo dinners. So, whoever eats at home for breakfast and dinner is getting a couple of meals per day of less processed food. It’s a work in progress.
This paleo coleslaw is something I made for dinner the other night when I had a hankering for coleslaw. It was easy and good, which is a tiny miracle because in my attempt to try new foods and also come up with clean versions of old favorites, I’ve had lots of fails. I think adding bacon made it even better. I’ve read that eating bacon with everything is something newbies do when they first jump on this bandwagon. All I can say is Yeehaw! There is something magical about bacon. Making my own mayonnaise has been great, too. We’ve used the homemade mayo for tarter sauce and tuna salad, and now we can add coleslaw. Here’s the easy recipe:
Paleo Coleslaw
1 bag of shredded cabbage with carrot shreds
6 strips of bacon, cooked and crumbled
Dressing:
1/2 cup homemade mayo {this is the recipe I used}
1/4 cup of apple cider vinegar
2 tablespoons of honey
1/2 teaspoon of pepper
Combine dressing ingredients and pour onto shredded cabbage. I didn’t use all the dressing because I didn’t want to drown the cabbage. Stir in the crumbled bacon.

We ate the coleslaw with bison burgers covered in grilled onions and roasted sweet potatoes. Success!

I just got home from a tropical vacation and am dying to make myself some fresh (& healthy!) cole slaw. This is exactly what I’ve been looking for. Will be stopping by here more often

Your coleslaw recipe is awesomely balanced. It’s neither too sweet nor too pungent from the vinegar.
However, pepper is a weird ingredient around here for coleslaw so I omitted it and included a tiny bit of salt. (which I know will draw moisture out from the cabbage and dilute the dressing a little, but I’m ok with that)
