Do you eat a lot of Mexican food at your house? It’s a staple around here, from tacos to enchiladas to burrito bowls. I recently made up this shortcut for pico de gallo that’s inexpensive, easy, and tasty. The trick is starting with a can of diced tomatoes, southwestern style. I used this Target brand that was on sale for 48 cents. It’s great because the peppers and lime juice are already in the can. Just add finely chopped onion. If I happen to have fresh cilantro, I add that, too. That’s it. This condiment goes well with all of the Mexican food we eat. I especially like it with burrito bowls that we copied from Chipotle.

      Sure! It’s basically rice, some kind of meat from the crock pot, black beans, pico de gallo, shredded cheese, and avocado. I’ll see if I can turn that into a post soon with more details, but really, there aren’t many more details. Thanks for stopping by, Elaine!
