Pico de Gallo
Do you eat a lot of Mexican food at your house? It’s a staple around here, from tacos to enchiladas to burrito bowls. I recently made up this shortcut for pico de gallo that’s inexpensive, easy, and tasty. The trick is starting with a can of diced tomatoes, southwestern style. I used this Target brand that was on sale for 48 cents. It’s great because the peppers and lime juice are already in the can. Just add finely chopped onion. If I happen to have fresh cilantro, I add that, too. That’s it. This condiment goes well with all of the Mexican food we eat. I especially like it with burrito bowls that we copied from Chipotle.
